The south did a lot of things better....!!

Have you ever tasted cracklin cornbread...?  Have you ever had a good slice of Skillet Cornbread ?.... Today being my day to cook for the Rams game at the Eagles put me in the mood for some good old fashioned southern cooking ........ Made from scratch cooked in a properly seasoned cast iron skillet and complimented with a pot of southern style Ham N Beans and Deer Chili.... It just can't get any better... The sad news is that it all got ate up..... I was really hoping to bring a slice or two home and warm it up for a late night snack topped with butter......  But my  trusty cast iron skillet is seasoned and ready to cook again...... I can remember so many great meals that mom cooked in her cast iron skillet that she still has today..... Fish cakes, potato cakes, fried potatoes and onions. and not to mention all the great tortillas filled with all kinds of country goodies cooked on that skillet......Lamberts in Sikeston could not miss with their menu....Genuine southern cooking......How could they not have made a fortune ?..... And the throwed rolls.....What a gimmick.....

When's the last time you've had southern quisine ?

I had to make my own cracklins to make the pan of cracklin cornbread but it was well worth the effort....... All three pans I made were loaded with honey.... I almost forgot how much flavor one can obtain cooking with Buttermilk.....

Wow I havn't had a good Pineapple Upside Down Cake in a long time........ They just don't taste the same in the galvenized no stick cake pans........

My gramma used to make the best......

LOVE THE SEASONED CAST IRON SKILLET...Which reminds me; I think my sis has all of them from my mom and grandma; gonna have to pay her a visit and get one of them.

I have the same cast iron skillet my mom used to make pineapple upside down cake in. Good cast iron skillets are hard to find, the new ones are different. I tend to pick them up at thrift stores and yard sales and bring them home, scub them out an season them and they are good to go.

I had good ole fashioned southern cooking last weekend. Fried Chicken (cast iron skillet fried), greens, cornbread (hot water cornbread cooked in a cast iron skillet), sliced tomatoes, homemade mac and cheese, and for desert - sweet potatoe pie mad with splenda! Couldn't taste the difference!

We don't eat a lot of fried foods, but sometimes ya just got to have it. Have you noticed that even cooked in the cast iron skillet and done just the way your mom cooked it, it just isn't the same? It's because she used lard - can't even find that any more.

OMG the best corn bread ever had was at a TOM'S a restraunt in Toledo Ohio. Evereything there is homemade EVERYTHING...

Tommy, I have two sets of cast iron skilets and dutch ovens. One for camping and one for home. It is how I learned to cook so that is what I still use. My kids brought us a full set of non stick cookware by Kitchenaide. Afraid it is still in the boxes.
But dang it! Now I need some cornbread and Ham and Beans! Or fried chicken or catfish or creole gumbo or.......

Suzeeq..... Cracklins are similiar to bacon..... I used slab bacon to make the ones I used yesterday...... When the oldtimers would render Lard from the hogs skin they would have little hunks of meat left over.... Then they would put them in in cornbread or make pork rinds out of them...... If your ever in Dilver Dollar City watch them make fresh Pig Skins..... That is real cracklins they are frying..... You can also buy cracklins as a snack at some of the quick marts but they are not the same as the ones made in the south.......

Deb there is a company called Lodge Logic that makes an authentic cast iron skillet.... They are made in the USA....... Imagine that something made in America........
It is the skillet that I use and believe me it is great..... I think you can find it at lowes of Kohls.... It is a great skillet.... Dont ever wash it with soap.........
This is stated on their website..........

Don't be fooled by cheap Chinese imitations -
If it's not Lodge, it's not Made in America.

Wow, I made pineapple upside down cake last week and I also make ham & Beans and cornbread and fried potatos yesterday. But they were muffins not cst iron cake. Yours was prolly MUCH better!

when we burned trash mom would have us take the skillets, like 5 of them that were toooo seasoned, out and throw them in the fire barrel to burn some of the crap off them, lol, huh, i have never done that with mine i got from mom, i dont use them like she did, for like everything.

I had cornbread in cast iron skillet last week when Truman made a pot of home made veggie soup. I used Bacon grease get it really hot in oven or burner and then pour in the cornbread. You hear it sizzle and man it is nice and crunchy on the outside. But I never use my cornbread as a desert like some southern's do. I do like it out of the oven with butter on it tho. No honey please.

I use cast iron skillet's all the time. I have some that the bottom's are crusty but they still cook good so I am not burning it off. Last time they were burned off was 20 year's ago in our wood heating stove.

I even use sos pad's or scratcher's on mine.
Everyone say's your suppose to wipe them out with newspaper only. Sorry gravy don't come out good with newspaper. I have to wash mine and I dry them on the burner too.

I don't let anyone wash my skillet but me. As they alway's seem to stick when someone else washes them.

I like the cast iron dutchoven for cooking bean's outside but not on the stove wierd aren't I. They taste different to me. Not as good.
By the way I am not getting email notifacation from fox again. So I am late seeing some blog's.

My mom was born in a cotton field and all they had was southern cooked food. This was in Tennessee and man was their food was good. And yes they used the cast iron skillet and we still do and season it.

My Grill on my barbeque is cast iron so every once in a while when I am burning off the grill getting ready to barbeque I will put the skillet out there and burn it off too.....

I don't know if it was south north east or west that came up with it but love turkey deep fried........

Hey Wild.....we had a fish fry saturday nite. Fresh suckers and red horse that we gigged last week. Also, lots of sliced potatoes and onions too. Didn't have cornbread tho, but it sure is good made in a dutch oven over a camp fire! Be more fish frys coming and more gigging too this fall!

Deep fried turkey is awesome!
I always make my cornbread in my cast iron skillet. Tastes way better that way.
Rosie, my Dad used to throw Mom's and Grandma's cast iron skillets in a brush fire to burn the crud off. I thought that was a riot as a kid. My hubby has done the same thing with one of mine.

I always cook southern.

Sunday I made hot water cornbread....

It was really good. I have never had cracklin cornbread.
